apricot & incan berry balls

these are so easy to make and so delicious.  the little incan berries provide the 'zing' in these sweets.  they are great for when you need a snack on the go.  I like to keep mine in the fridge and they last for ages.

Ingredients

​

3/4 cup of unsulphered dried apricots

1/2 cup of raw white almond butter

1/2 cup of raw dried coconut flakes

1/4 cup of dried incan berries

1 tbsp of maca (optional)

1/4 tsp cinnamon (optional)

method

​

place everything except the coconut flakes in your blender and blend until mixture looks like a mass of soft breadcrumbs.  roll into balls.  makes about 12 but depends on the size.  

​

they are great eaten like this but I love to roll them in some finely ground raw coconut flakes.  I use a coffee grinder to do this. dusting them in the coconut just finishes them off nicely adding a professional touch - good if you want to give them away as a gift.

it's easy to double up this recipe.  

​

for info:- the general rule for making these sorts of sweets is 2 cups dried fruit to 1 cup of nuts/seeds or nut butter.
