wild garlic pesto

When the wild garlic season is here in Spring I can't help but go and find myself some and my favourite recipe to make is wild garlic pesto. Simply delicious.


handful of wild garlic leaves

2 oz shelled hemp seeds

1oz cashews

2 tbsp nutritional yeast

4 tbsp olive oil

1 tbsp yacon syrup or agave

1 tsp apple cider vinegar

1 tsp tamari


The key to great pesto is making sure your leaves are really dry after you have washed them.  Then place all your ingredients into your blender and blend until it's all broken down.  I like to leave it slightly lumpy for texture.  

Makes enough for 2-4 people depending upon what you are doing with it.  I scoop it onto half an avocado or mix it into some courgette or pile it on a raw cracker.  

The recipe works just as well with basil leaves if you don't have garlic leaves.  Just add a clove of garlic to your ingredients.
